I recently bought a Jelkes table in great condition, although the timer drops the bar at 8mins. How do I adjust the timer up to 15mins? I can’t find any instructions anywhere online but did find this forum so hopefully someone can help? I’m hoping it’s a simple fix!

Savs your man really but.
With the table top up and the cover on the timer off you should see a ticker arm with a couple of knurled nuts, winding towards the cut end of the thread slows the timer. Then in the middle of the timer there is a threaded stud about 0BA (6mm)I would guess,this operated the bar latch, if you undo the locknut and wind this back in it will also increase the bar time but you have to make sure you dont wind it back too far or the timer will time out and stop before the latch operates. Once you've set it as required make sure you tighten the locknuts. As sav will tell you, you need the timer to run on for a good few seconds, ideally 30 or so after the bar has dropped
Now I'm sure thats as clear as mud, but its something to be going on with until the experts tell you different

Basically correct but you may need to add weight to the ticker arm as well. Washers or even blue-tac will do the job.
